I sometimes think that I dreamed Sri Lankan food.
I mysteriously did not take many pictures of it and the generic denomination of rice and curry you read on every menu there seems far from the sophisticated and complex truth. From a distance you could think it’s a variation on Indian food, yet it doesn’t taste the same, the spices, the vegetables…it is different! It is in fact so varied, with a myriad of little dishes served at each meal, that I can’t even pinpoint what makes it so unique. It’s a pity that its secrets elude me because there is much of it I would have loved to bring back to my kitchen. It’s the kind of magic that can turn simple beans or butternut squash into a pure delight.
Next time I’ll take a cooking class and get to the bottom of this!
